Meat color: white, light pink, pink and light yellow.
Fillet size: Divide by weight of each fillet into 1 of the following 3 groups:
- 4-6 ounces, 6-8 ounces, 8-10 ounces, 10-12 ounces, 12 or more;
- 3-5 ounces, 5-7 ounces, 7-9 ounces, 9-11 ounces, 11 or more;
- 60-120g, 120-170g, 170-220g, 220-280g, 280-ib.
Freezing method:
- Freezer IQF with protective tape on fillets 5,10,15 and 20%.
- Alternating block, each block is 5kg or 3kg with 5, 10,15 and 20% ice coverage.
Packing form:
- Packaging 10 lb, 15 lb, 20 lb, 5 kg, 7 kg, 10 kg, 20 kg.
