Gum arabic is used:
for the production of confectionery products as a binder component, to prevent sugar crystallization, as a glossy coating of dragees, to create glazes, as a filler to fill the voids formed, to control the activity of water;
in the production of bakery products to retain moisture, increase product uniformity, reduce the degree of unwanted frying;
for the production of beer as a foam stabilizer;
for the production of red wine as a color stabilizer;
for the production of soft drinks as a stabilizer of essential oils, for additional enrichment of the product with fiber;
in the production of dairy products to increase the volume, stabilize emulsions;
for the production of chewing gum, to ensure retention and better release of aroma, increase the duration of the aftertaste;
for the production of aromatic additives.
A food supplement is also used for the manufacture of pharmaceuticals and cosmetics.
